Os aperitivos extrudidos são um segmento crescente do mercado à base de milho. A tecnologia de cozedura por extrusão é utilizada na indústria alimentar para a produção de vários tipos de géneros alimentícios. A cozedura por extrusão é um processo de curta duração, alta temperatura e alto cisalhamento. O processo de extrusão é efectuado em dispositivos conhecidos como extrusoras. Os produtos sofrem gelatinização do amido, pelo que os extrudados já estão pré-cozinhados e não necessitam de cozedura adicional. Na experiência foi utilizada uma extrusora de rosca dupla. A farinha é incorporada com pasta de cenoura pesada de acordo com o nível mencionado pelo software. Ambas são bem misturadas e peneiradas. Esta mistura é então introduzida no alimentador da máquina de extrusão. A temperatura do barril e a temperatura do alimentador foram mantidas constantes durante todo o processo, enquanto a temperatura da matriz e a velocidade do parafuso foram alteradas de acordo com o tratamento mencionado. Os produtos foram também avaliados quanto às suas caraterísticas físicas e sensoriais. Os dados dos resultados foram processados de acordo com a Metodologia de Superfície de Resposta (RSM), utilizando o Design Rotativo Composto Central (CCRD). Com base na experiência, verificou-se que as condições óptimas de tratamento eram: 113 °C de temperatura do molde, 267 rpm de velocidade do parafuso e 13,5% de nível de cenoura.
