Sous vide (на френски), известен също като продължително готвене при ниска температура, е метод на готвене, при който храната се поставя в пластмасова торбичка или стъклен буркан и се готви на водна баня за по-дълго от обичайното време за готвене (обикновено 1 до 7 часа, до 72 или повече часа в някои случаи) при точно регулирана температура.


Готвенето Sous vide се извършва предимно с помощта на термични потапящи циркулационни машини. Температурата е много по-ниска от обикновено използваната за готвене, обикновено около 55 до 60 °C (130 до 140 °F) за червено месо, 66 до 71 °C (150 до 160 °F) за домашни птици и по-висока за зеленчуци. Целта е продуктът да се сготви равномерно, като се гарантира, че вътрешността е правилно сготвена, без да се препича външността, и да се запази влагата.


Готвенето Sous vide е много по-лесно, отколкото си мислите, и обикновено включва три прости стъпки
