Gavius Apicius, ami de Tibere est entre dans la legende imperiale pour avoir porte la gloutonnerie a des extremes inouis. L'auteur de L'Art Culinaire s'est fait connaitre par ses extravagances culinaires en inventant des plats tels que le talon de chameau ou les langues de flamants, mais aussi par les depenses somptuaires que necessitaient ses festins. On raconte meme que, dans l'obligation de restreindre son train de vie, il se serait empoisonne. Meme si la version que nous possedons est sans doute largement posterieure a Apicius et daterait probablement des annees 400, L'Art Culinaire, n'en constitue pas moins pour nous un precieux temoignage historique, tant sur les gouts de l'epoque que sur les techniques de conservation des aliments. La presente edition retrace brievement la vie de celui qu'Isidore nommait le premier ordonnateur de la cuisine et propose une etude substantielle de la litterature grecque et latine. En effet, la litterature culinaire etait dans l'Antiquite tres developpee avec des auteurs comme Chrysippe de Tyane, et liee a la dietetique. La langue de ce texte tardif est ensuite analysee, tandis que l'histoire, complexe, est relatee en detail. Les testimonia, le plus souvent de Seneque, precedent le texte, completes par les Extraits d'Apicius par Vinidarius. L'ouvrage est en outre enrichi d'un commentaire, d'un Index Nominum et Locorum, d'un Index Mensurarum et Ponderum, d'un Index plantarum, d'un Index Utensilium, ainsi que d'un Index Ciborum.
