About the Author: Thomas A. Vilgis ist hauptberuflich Professor für Physik, erforscht am Max-Planck-Institut für Polymerforschung das Zusammenspiel und die Funktion von Lebensmittelmolekülen und ist in Nebentätigkeit leidenschaftlicher Genussmensch. Er lehrt an den Universitäten Mainz und Gießen zu soft matter food physics und molekularen Aspekten der Ernährung.
