L'origine des cris de Paris se perd dans la nuit des temps, écrit en 1887 l'érudit et journaliste Victor Fournel dans Les Cris de Paris, passionné par l'histoire de la capitale à laquelle il consacra plusieurs ouvrages. Les petits métiers de rues sont déjà exercés au milieu du XIIIe siècle, lorsque le prévôt de Paris réorganise les corporations et rédige son depuis célèbre Livre des Mestiers.

Au moins dès cette époque et jusqu'à la fin du XIXe siècle, le vieux Paris bruissait depuis l'aube jusqu'à la nuit tombée de la réclame lancée à tue-tête par les marchands ambulants, dont les slogans proférés à grands cris pittoresques longtemps pallièrent l'absence de moyens de publicité tels que gazettes et prospectus. Il n'y a alors, en effet, pas jusqu'aux marchandises et activités, dont on s'imagine aujourd'hui peu aisément qu'elles aient pu être délivrées ou se dérouler dans les rues, qui n'y avaient pourtant pas leur place: dans cette enfance de l'art, les industries les plus simples se décomposaient souvent en parties innombrables; chacune avait son colporteur spécial, et celui-ci proclamait sa marchandise avec une assourdissante et interminable loquacité, explique Victor Fournel.

Le perfectionnement des arts et des sciences sonnera le glas du mercier ambulant, de la marchande de chapeaux installée sous un auvent, de l'allumeur de réverbères établi au milieu de la rue pour nettoyer les vitres de la lanterne descendue à portée de la main, du colporteur d'almanachs, du crieur de vin, du marchand de café, du vinaigrier, du marchand de rubans, du décrotteur, de la marchande de plaisirs, du porteur d'eau, et de tant d'autres figures qui aujourd'hui nous apparaîtraient comme singulières mais à l'époque étaient si familières. L'esprit de spéculation, la vapeur, l'invention de nouveaux métiers, l'accroissement des fortunes et l'association des capitaux ont permis de réunir et de fondre en faisceau des myriades de métiers ambulants qui, maintenant, attendent à domicile le chaland, qu'ils allaient provoquer autrefois, écrit encore Victor Fournel voici un siècle et demi.
