Inhaltsangabe: Einleitung: Ein wesentlicher Bestandteil der biotechnischen Ausbildung sind aufwändige und teure Kultivierungsexperimente. Um Schülern, Auszubildenden und Studierenden den Zugang zu diesen komplexen Experimenten zu erleichtern, können Simulationsexperimente in die Ausbildung integriert werden. Das Ziel dieser Arbeit war es, einen Simulator zur Echtzeitsimulation von Kultivierungs- und Fermentationsprozessen in begasten Rührkesselreaktoren zu entwickeln. Das entwickelte modulare mathematische Modell besteht aus verschiedenen Teilmodellen, die auf bereits experimentell verifizierten Gesetzmäßigkeiten basieren. Die Teilmodelle bestehen im wesentlichen aus Bilanzgleichungen, aus phänomenologischen Beziehungen, aus Korrelationen zur Modellierung von Stoffeigenschaften und aus Kinetiken. Das Gesamtmodell beinhaltet u.a. Wärmedurchgang, mikrobielle Wärmeentwicklung, Stoffeigenschaften als Funktion der Prozesstemperatur, Sauerstoffübergang als Funktion von Begasung und Rührerdrehzahl, Insitu-Sterilisation und Schaumbildung sowie die realistische (verrauschte) Darstellung der Online- und Offline-Daten. Das biologische Teilmodell basiert auf einem neu entwickelten massenbilanzierten Modell zur Beschreibung des Wachstums von Saccharomyces cerevisiae. Es berücksichtigt das aerobe und anaerobe Wachstum auf Glucose, das aerobe Wachstum auf Ethanol, den Crabtreeeffekt, den Pasteureffekt und die Katabolitrepression unter Anwesenheit von Ethanol. Um den Entwurf von Regelungs- und Prozessführungskonzepten zu ermöglichen, wurde das Modell in das Prozessleitsystem WinErs implementiert. Mit dem so entstandenen Simulator können alle wichtigen verfahrenstechnischen und biologischen Effekte einer Fermentation sehr realistisch in Echtzeit abgebildet werden. Der Simulator eignet sich sehr gut, um Lernenden biotechnische Produktionsprozesse näher zu bringen.
