INTRODUKTION


At forberede flere grøntsager og lave mad derhjemme er en simpel strategi, der i høj grad kan forbedre dit helbred. Hvad mere er, har forskning rapporteret, at tilberedning af mad derhjemme er forbundet med mindre fastfoodforbrug og penge brugt på mad.


Et af de første skridt mod at lave mere mad derhjemme er at lære forskellige måder at tilberede friske grøntsager på. Disse færdigheder vil gøre dig i stand til at gøre grøntsager til stjernen i dine måltider, hvilket igen vil give dig tonsvis af gavnlige næringsstoffer og føre til forbedret sundhed.


Grundlæggende metoder til tilberedning af grøntsager


A. HAKKNING

At hakke er omtrent så grundlæggende, som du kan blive, og det er noget, som erfarne hjemmekokke kan tage for givet. Men ikke alle lærer at skære, skære og julienne grøntsager som barn. Derfor er hakning den første og fremmeste færdighed at mestre, hvis du vil blive en bedre kok og spise flere grøntsager.


B. DAMPENDE

Dampning er en ældgammel teknik til at tilberede grøntsager. Nogle gange bliver det overset, men det får virkelig arbejdet gjort! Plus, forskning viser, at dampning af nogle grøntsager kan bevare deres næringsstoffer mere end andre metoder til madlavning. At dampe en grøntsag betyder at udsætte den for varmt vand for at blødgøre maden og gøre den mere mør.


C. KOGNING

At koge grøntsager er en af de nemmeste måder at tilberede dem på. Selvom kogning kan få nogle næringsstoffer til at suge ud af grøntsager i vandet, er det ikke tilfældet for alle typer grøntsager. Nogle gange er kogning den mest effektive måde at tilberede kartofler og andre faste rodfrugter på, selvom nogle næringsstoffer går tabt. Og hvis du spiser en række forskellige både kogte og rå grøntsager, behøver du ikke bekymre dig om at bevare den optimale ernæring af hvert enkelt måltid.


D. SAUTÉING

At sautere en grøntsag betyder at koge den i en eller anden form for fedt over varme. De mest almindelige fedtstoffer, der bruges til sautering, er ekstra jomfru olivenolie, avocadoolie, smør og endda kokosolie. Du kan også tilføje hakket hvidløg, krydderurter og krydderier og/eller salt og peber til en sauter.


E. MARINERING

Når du begynder at blive mere komfortabel i køkkenet, kan du lave marinader til grøntsager! Børstning eller blødning af grøntsager i en blanding af olivenolie, krydderier, urter og andre smagsstoffer, før du tilbereder dem, kan øge deres smag og ømhed, når de er kogt. Marinerede grøntsager kan sauteres, steges eller grilles.


F. STEGNING

Hvis du er ny til at stege grøntsager, aner du ikke, hvad du går glip af! Ristning forvandler fuldstændig smag og teksturer af rå grøntsager. Mange mennesker oplever, at de grøntsager, de absolut hader at spise rå, er nogle af deres foretrukne at spise ristede.


G. HURTIG SYLTNING

Hurtig syltning er en enkel og sjov teknik til at tilberede grøntsager. Selvom syltning kan lyde skræmmende, er det utroligt nemt at lave syltede grøntsager (køleskabssyltelag, ikke den holdbare slags). Med lidt eddike, sukker og krydderier kan du sylte stort set alle slags grøntsager.
