About the Author: Dan Lepard is an award-winning baker and sourdough expert, who has started bread bakeries for top London chefs Fergus Henderson, Yotam Ottolenghi and Giorgio Locatelli, and continues to help home cooks and chefs master sourdough in their kitchens.
