Co je smazení?

Smazení je způsob vaření, při kterém se jídlo vaří v lázni horkého oleje nebo tuku, typicky mezi 350 a 375 °F. V závislosti na typu smazení je jídlo buď částečně nebo úplně ponořené v tuku, dokud jídlo nezíská zlatohnědou barvu s křupavou vnějsí vrstvou a vlhkým vnitřkem.

I kdyz jsou smazená jídla nepopiratelně chutná, měla by se konzumovat s mírou, protoze kazdodenní konzumace smazených jídel by mohla představovat vyssí riziko srdečních chorob pro veřejné zdraví kvůli obsahu tuku a potenciálu pro konzumaci trans-tuků.


Jak smazení funguje?

Ke smazení dochází, kdyz se potravina vlozí do horkého oleje a rychle se začne dehydratovat. Kdyz je potravina ponořena do oleje, voda v přísadě se okamzitě začne vařit a stoupat na povrch, coz způsobí tvorbu volných mastných kyselin. Skrobová krusta na vnějsí straně pomáhá uzamykat vlhkost a zabraňuje úplné dehydrataci potravin.

Během procesu smazení dochází k Maillardově reakci, která má za následek zlatohnědou barvu a bohatou chuť. Teplo z oleje také vaří vnitřek jídla, coz umozňuje změknout vláknům, denaturovat bílkoviny a zelatinovat skroby.

Ochranná kůra kolem jídla je obvykle tvořena potravinami s vysokým obsahem skrobu, jako je strouhanka nebo těsta na bázi mouky, ačkoli přirozeně skrobová jídla, jako jsou brambory, mohou ve fritéze vytvořit svou vlastní křupavou vnějsí vrstvu. Tato bariéra je nezbytná pro proces smazení, aby zadrzela vlhkost a zabránila nadměrné absorpci oleje.

Smazená jídla jsou důlezitou součástí téměř kazdého druhu mezinárodní kuchyně, od celoamerických klasik státních veletrhů, jako jsou kukuřiční psi, tatérky a smazené okurky, az po oblíbená jídla po celém světě, jako je japonské vepřové tonkatsu, indická pakora a mexická churros.

Ačkoli se tento způsob vaření pouzíval jiz od starověku, dnes jsou smazená jídla známá předevsím jako pouliční jídlo a stálice průmyslu rychlého občerstvení. Smazení je vsak také vsestranný způsob domácího vaření, který se pouzívá vsude v kuchyních k dosazení křupavých, zlatohnědých pokrmů za dostupnou cenu
