About the Author: Stephen Saunders, RD, is a vegan and registered dietician who earned his bachelor of science degree in food and nutrition from Plattsburg State University, New York. He completed his dietician internship at the University of Delaware and received his bachelor of science degree in biology from Long Island University.
Saunders has worked as a registered dietician for over a decade, including serving in hospitals as a clinical dietician. He is board certified to act as a nutrition support specialist for critically ill patients.
