Cómo hacer un risotto

La base del risotto es increíblemente sencilla: solo se trata de cebolla picada fina que se cocina suavemente en mantequilla o aceite hasta que se ablande. Luego se revuelve el arroz y se tuesta con las cebollas y la grasa para calentar los granos de arroz antes de agregar el líquido. El vino y el caldo aportan al arroz la mayor parte de su sabor, así que utiliza un buen vino blanco (uno que te beberías con gusto el resto de la botella).
