Dazu dient eine quantitative Befragung von Verbrauchern, die auf einer umfangreichen Literaturanalyse sowie einer qualitativen Vorstudie in Form von Experteninterviews aufbaut. Über das Nachhaltigkeitsverständnis und das Einkaufsverhalten der Konsumenten hin-aus ist dabei von besonderem Interesse, inwieweit aktuelle private, öffentliche und unternehmerische Initiativen dazu beitragen, dass die Verbraucher mehr nachhaltige Lebensmittel konsumieren. Vor dem Hintergrund der geschilderten Problemstellung steht dabei die folgende Forschungsfrage im Mittelpunkt: "Welche Initiativen für nachhaltigen Lebensmittelkonsum sind in der Lage, einen Beitrag zur Schließung der Intentions-Verhaltens-Lücke zu leisten?" Ausgehend von dieser zentralen Fragestellung will die Arbeit untersuchen, inwiefern die Konsumenten gewillt sind, von der Konsumentensouveränität aktiv Gebrauch zu machen, d. h. durch ihre Konsumentscheidungen Art und Umfang der Produktion zu bestimmen, und wo sie zusätzlichen Aufwand scheuen. Zur Beantwortung der Forschungsfrage sind verschiedene Teilaspekte zu berücksichtigen, die sich aus der unterstellten Wirkungskette ergeben. Zentrale Komponenten sind das Nachhaltigkeitsbewusstsein der Konsumenten, ihr konkretes Einkaufsverhalten und die unterschiedlichen praktischen und theoretischen Ansätze, wie beides zusammenhängt bzw. zusammengebracht werden kann. Erstens gilt es daher zu ermitteln, was die Konsumenten unter nachhaltigem Lebensmittelkonsum verstehen und wie sich dadurch ihr Einkaufsverhalten verändert. Zweitens ist zu überprüfen, inwiefern sich tatsächlich von einer Intentions-Verhaltens-Lücke sprechen l
